Chocolate Peanut Butter Energy Bites

Ingredients:

• 1 cup dry Old Fashioned oats

• 2/3 cup toasted unsweetened coconut flakes (I skipped the toasting)

• 1/2 cup peanut butter

• 1/2 cup ground flax seeds

• 1/3 cup honey/agave nectar/maple syrup

• 1/4 cup unsweetened cacao powder

• 1 tablespoon chia seeds

• 1 teaspoon vanilla extract

Directions:

1. In a medium-size bowl, stir together all ingredients until thoroughly mixed.

2. Cover and chill in the refrigerator for at least half an hour, to make the mix easier to handle and mold.

3. Once chilled, roll into balls of whatever size you would like (mine were about 1” in diameter). Makes about 20 balls.

4. If the mix seems too dry, add in an extra tablespoon or two of honey or peanut butter.

5. Store in airtight container and keep refrigerated for up to 1 week.
