Whole Wheat English Muffin

Makes: 1 Serving | Prep: 10 minutes

Ingredients:

• 1 whole wheat English muffin (or GF if gluten intolerant)

• 1/2 teaspoon avocado or extra virgin olive oil

• 1 - 2 eggs

• 1 tablespoon of shredded cheddar

• 1 cup (~handful) Power Mix greens

• Dash of salt, pepper, and turmeric

• 1 cup fresh mixed berries

Directions:

1. Heat oil in a frying pan (or omit if using non-stick pan)

2. Fry 1-2 eggs to your liking. Season w/ dash of salt, pepper, turmeric

3. Add 1 tbsp of shredded cheddar cheese

4. Toast English muffin

5. Assemble toasted English muffin with egg, cheese, and mixed greens. Add berries on the side. Enjoy!
